It's the most wonderful time of the year!....pumpkin time! I love trying all different kinds of pumpkin recipes. This week's find is Pumpkin Snickerdoodle Cupcakes from Your Cup of Cake. These pumpkin cupcakes are topped with a cinnamon sugar cream cheese frosting. And the good news is these pumpkin cupcakes are made with a yellow or spice cake mix. Yay! The cupcakes are then dipped in butter before the frosting is added on top. Delicious! This one is definitely going to happen at my house.

November Specials from SusieCakes Bakery
I follow lots of bakeries on Instagram (@elisewallace). Which is a bad thing most of the time because it makes me want cupcakes, cookies, and cakes all the time!
Last week SusieCakes posted their November specials on Instagram and they sound delicious! I absolutely love their pumpkin cupcakes with cream cheese frosting. I've never tried their pumpkin cheesecake or pumpkin bread pudding, but I can only imagine they are divine too.
What is your favorite item from SusieCakes? I love anything that has frosting on it and their chocolate chip cookies. Yum!

Easy Chocolate Pumpkin Cupcakes from Picky Palate
I can't pass up a good pumpkin recipe. I'm a sucker for anything pumpkin and it's definitely that time of year!
Picky Palate recently published a recipe for 2-ingredient Chocolate Pumpkin Cupcakes. Two ingredients?! That's my kind of recipe! All you need is a can of pumpkin and a chocolate cake mix. That's it.
Well, you'll need a few other ingredients if you want to make homemade frosting. And trust me, you'll want to use the one from Picky Palate because it uses brown butter! Yes, I'm seriously making these this weekend.

Baking Fun: Pumpkin Banana Bread
(Don't mind the dog treats--I didn't use them)
When I get stressed, I either clean or bake. Since my house is almost spotless (from keeping it clean for house showings, which is also the cause of my stress), I needed to bake something. I wanted it to be something new. I had a few ripe bananas that were just begging to be used, so I found a recipe for Pumpkin Banana Bread from Averie Cooks. I love pumpkin bread and I love banana bread, so I knew this would be a winning combination.
This was also my first time using yogurt in a bread recipe to make it moister. The bread turned out so moist that I kept thinking it wasn't cooked all the way. That sometimes happens when I use bananas too. Does that happen to anyone else?
I didn't add the browned butter cream cheese frosting, but I can imagine it would make this even more fabulous. I bet this would be a great cupcake recipe too.

Pumpkin Cupcakes with Salted Caramel Frosting
My favorite time of year means my favorite kind of cupcakes: pumpkin! I've got to try out this recipe from Two Peas and Their Pod for Brown Butter Pumpkin Cupcakes with Salted Caramel Frosting. I'm very interested to see how this frosting pairs with the cupcakes, as I usually see cream cheese frosting with pumpkin cupcakes. Guess I need to bake them to find out!

Pumpkin Ginger Cupcakes from My Baking Addiction

I've seen my fair share of pumpkin cupcakes (which I LOVE), but this was the first one that contained crystallized ginger. My Baking Addiction creates a recipe with some great autumn flavors. Although I've never used crystallized ginger before, she notes at the bottom of the page where to find it (spice aisle) and what else it is known as (candied ginger). Thanks for the tips and recipe.

Mini Chocolate Chip Maple Pancake Cupcakes from Two Peas & Their Pod
I love mini cupcakes. They are the perfect size to not make me feel too guilty for eating a few. Two Peas & Their Pod recently posted a recipe for Mini Chocolate Chip Maple Pancake cupcakes inspired by a cupcake from Baked by Melissa in NYC. I can see why she wanted to recreate this recipe, as it was one of my favorite cupcakes from Baked by Melissa too! (Check out my review here.) You can find more photos and the recipe here. Enjoy!

Last weekend I baked up a different recipe from Two Peas & Their Pod's website. These Pumpkin Gingersnap cookies were delicious, especially when saturated in milk. You can find the recipe for these cookies here.

Everything Fall Cupcake from Cupcake Project

If you're like me, then you love this time of year because of flavors. My favorite autumn foods include pumpkin and apples. Cupcake Project is brilliant and has combined all of my favorite flavors into one super cupcake: The Everything Fall Cupcake. This cupcake has pumpkin, apple, maple, spiced rum, brown sugar, cinnamon, and cranberry. All of our fall flavors in one cupcake! And that isn't even the best part: this cupcake has a cupcake inside!
Drool over the description, then make it yourself. The recipe can be found here.
Pumpkin, spiced rum, and maple cupcakes topped with cinnamon cream cheese frosting and dried cranberries - with brown sugar frosting-topped apple cobbler cupcakes baked inside.
I just wish the weather would cool down so I would feel like baking. It was really 105 degrees last week. Fall....where are you?

Cupcake Dog Toy for a Guilty Dog
The other day I was picking up dog treats at Target and spotted this cupcake dog toy.
I know my dog would love it because she loves real cupcakes too. Last night after leaving the room for about 30 seconds, I came back in to find a trail of cupcake crumbs and this guilty face...
She's almost too cute to get mad at. Looks like I need that cupcake toy.

Pumpkin Pie in a Cupcake
The day after Halloween. Sugar coma, anyone? No time to waste. Halloween is over, so the holiday season has officially begun!
Thanksgiving is one of my favorite holidays. Can you guess why?
Found this pumpkin pie cupcake via Cupcakes Take the Cake. This cupcake from Bake It in a Cake is no ordinary pumpkin pie cupcake, it's a mini pumpkin pie baked into a vanilla cupcake and topped with cinnamon cream cheese frosting. Don't need to waste time eating two desserts, just eat this one!

Pumpkin Dessert Recipes
Fall is here, although the weather might make you wonder otherwise. My favorite part about fall is the reappearance of pumpkin. For some reason, people don't eat it much during the rest of the year. I've gathered a list of some yummy pumpkin desserts. Hope you find some you like too!

Chocolate and Pumpkin Pie Shortbread Bars
I wish I had stocked up on canned pumpkin last year, but how was I to know that there would be a pumpkin shortage again this year! I haven't checked my local grocery store lately to see if they have canned pumpkin in stock. But when and if I find some, I will definitely be stocking up because pumpkin desserts are my favorite and it's pumpkin time!
Picky Palate posted a recipe for Chocolate and Pumpkin Pie Shortbread Bars. I really want to make these this year! You can find the full recipe and more photos on Picky Palate's website. By the way, she's a genius.

Nutrition Facts for Sprinkles Cupcakes
WARNING: If you love Sprinkles Cupcakes and want to continue eating them, don't read any further.
Today at lunch (as I was craving a cupcake), I began thinking about the nutrition facts of a cupcake. I had never seen any nor did I really want to. Curiosity got the best of me and I started researching. Since Sprinkles Cupcakes are some of the most well-known cupcakes, I figured they would be a good starting point.
The information wasn't hard to find and interestingly I found it on livestrong.com (via thedailyplate.com). Funny that they listed two of my favorite Sprinkles cupcakes:

Sprinkles Pumpkin Cupcake w/o frosting
Calories: 272
Total Fat: 8.75g (Sat Fat: 0)
Sodium: 0
Carbs: 34g
Protein: 0
But who eats a cupcake with frosting? Add Cinnamon Cream Cheese Frosting
Calories: 130
Total Fat: 5.5g (Sat Fat: 0)
Sodium: 0
Carbs: 19g
Protein: 0
Add those together and you have the nutrition facts for the Pumpkin Cupcake sold at Sprinkles. Let's do another:

Red Velvet Cupcake w/o frosting
Calories: 130
Total Fat: 1g (Sat Fat: 0)
Sodium: 240mg
Carbs: 29g
Protein: 3g
Not bad...for a cupcake with no frosting. Get ready for this.
Red Velvet with Cream Cheese Frosting
Calories: 497
Total Fat: 26.8g (Sat Fat: 16g)
Sodium: 412mg
Carbs: 61.5g
Protein: 6g
Whoa! I think I was in denial that cupcakes can be so bad for you! The funny part about this website is that it lists activities you can do to burn off all of these calories. If you eat this Red Velvet cupcake, you can croquet for 182 minutes or do bookbinding for 198 minutes.
Keep in mind that Sprinkles Cupcakes are HUGE and that you can cut out a lot of fat and calories by scraping off half of the frosting. This won't stop me from enjoying a delicious cupcake from Sprinkles.

My Birthday with Meringue Bake Shop
I celebrated my birthday a little over a week ago. My husband (the nicest guy in the whole world) threw a birthday party for me. Nothing makes you feel like the most special person in the world than when your friends and family gather together in honor of you! A HUGE "Thank You" to everyone who wished me a happy birthday. I had a great day!
That being said, what could possibly have made my birthday even better? Cupcakes, of course! Kristin of Meringue Bake Shop so kindly delivered cupcakes to me for my birthday! What a sweetheart!

FLAVORS!
A Kid Again: yellow cake filled with cookie dough topped with peanut butter buttercream
AFCB: yellow cake filled with caramel and peanuts topped with chocolate buttercream and drizzled with caramel, chopped peanuts, and a sprinkle of sea salt
Stuffed: pumpkin cupcake filled with pecan pie topped with cranberry buttercream
The Great Pumpkin: pumpkin cupcake filled with caramel topped with cream cheese buttercream
Snowball: spice cupcake topped with coconut buttercream
Sunday Morning: yellow cupcake filled with maple syrup and bacon topped with maple buttercream

I knew these cupcakes would go fast, so I hid them for most of the night. Eventually I brought them out and they were gone in a flash. If you were lucky enough to try one, you were in heaven! I got to try three of the flavors (Stuffed, The Great Pumpkin, and Sunday Morning) and I was so happy! I especially loved the cranberry buttercream frosting on the Stuffed cupcake.
Meringue Bake Shop is a custom cupcake company based in Orange County. I would highly recommend Meringue to anyone who is looking to order cupcakes for a wedding, birthday, baby shower, Christmas family party, whatever! You won't be disappointed!
Thank you Kristin!

Better Together: Cookie and Pie

Happy Thanksgiving!
In honor of Thanksgiving today, I want to share Cakespy's weekly post on Serious Eats. Cakespy has given us such desserts as the Triple Threat Dessert and Piece of Pie. I'm sure I'm not alone when I say that Jessie sure knows how to put ingredients together! Her newest creation, perfect for Thanksgiving, is Pumpkin Pie in a Chocolate Chip Cookie Crust. It's exactly what it sounds like...a pumpkin pie with a chocolate chip cookie crust. Why didn't I think of that?
Have a great Thanksgiving day and eat lots of desserts.

How to Make Turkey Cupcakes
I can't believe this year is almost over! Thanksgiving is just a few days away and I'm not ready yet. I haven't been able to bake since my oven is currently broken, but my parts arrived a few days ago and my husband will be fixing it tonight. Yeah!
Half the fun of cupcakes is making them. Here are a few tutorials on making Turkey Cupcakes for Thanksgiving. Gobble, gobble!

Chocolate Pumpkin Cupcakes with Toasted Meringue Frosting
I keep hearing rumors of a canned pumpkin shortage, but every time I've visited my Fresh & Easy store in the past two months, the shelves are stocked full. That hasn't stopped me from stocking up on pumpkin. Luckily, it's almost Thanksgiving so I have plenty of opportunities to use my pumpkin.
Cupcake Bake Shop recently posted a recipe for Chocolate Pumpkin Cupcakes with Toasted Meringue Frosting. I've mentioned several times how much I love pumpkin cupcakes, but I have yet to try a cupcake with pumpkin and chocolate. Each cupcake has a mixture of pumpkin batter and chocolate batter. I love the idea of toasting the meringue frosting to give the cupcake a little bit of a crunch.
This is definitely at the top of my list to make for Thanksgiving. Hopefully my oven will be fixed by then!
