Pistachio Hot Fudge Cupcakes from How Sweet It Is

I love trying new cupcakes flavors and I can honestly say that I have never eaten a pistachio hot fudge cupcake.

The recipe from How Sweet It Is has brownie bottoms, pistachio gelato, cream cheese frosting, topped with chocolate, crushed pistachios, sprinkles, and a chocolate-dipped cherry. You can make these cupcakes from scratch with the recipe from How Sweet It Is or you can fake it with a brownie mix and store bought frosting. Either way, these cupcakes sounds like winner!

Paleo Vanilla Cupcakes from Elana's Pantry

Have you jumped on the paleo bandwagon yet? I have a lot of respect for people who choose to eat or not eat certain foods because I have little self control. These paleo vanilla cupcakes from Elana's Pantry are made from only 7 ingredients, including coconut flour. I would definitely be willing to give them a try. You can find the recipe HERE.

Cadbury Creme Egg Cupcakes

One of coolest ideas that I've come across is for Cadbury Creme Egg cupcakes. Who doesn't LOVE Cadbury Creme Eggs?! Super easy to make. Just prepare your cupcake batter as you normally do, but add a frozen Cadbury Creme Egg on top on the batter before you put in the oven. That's it! It's the perfect Easter treat.

Dairy-Free Frosting!

I recently discovered that I'm slightly lactose intolerant. I can still have milk and dairy product, but I get all bloated. Not fun. It's actually quite sad because nothing goes better with sweets than a tall glass of cold milk.

So I like that Cupcake Project recently published a recipe for Sinless Smooth & Sweet Dairy-Free Chocolate Frosting. This frosting is made from cashews (interesting).

Even though I'm not staying away from dairy products completely, it's nice to know there are options. You can find the recipe HERE.

Thin Mint Cupcakes from Your Cup of Cake

Let's continue with the Girl Scout cookie cupcake theme and move right along to Thin Mints. Although Samoas are my favorite, almost nothing can compete with a frozen Thin Mint. YUM!

Your Cup of Cake posted a recipe for Thin Mint Cupcakes. These cupcakes are chocolate cupcakes with a Thin Mint frosting. Yes please! You can find the full recipe HERE.

Samoa Cupcakes from Me and My Pink Mixer

I remember the days when I used to eat a whole box of Girl Scout cookies guilt-free. I still eat a whole box myself, but now a bit of guilt accompanies it.

Guilt doesn't stop me though.

Me and My Pink Mixer posted a recipe for Samoa (Caramel deLites) cupcakes. These are chocolate cupcakes with a coconut buttercream frosting. Just another excuse for me to eat more Samoa Girl Scout cookies (my favorite). You can find the recipe HERE.

Intensely Thai Cupcakes from Cupcake Project

My love of Thai food started about five years ago. I grew up thinking it was gross, until I actually tried it and I fell in love. I made my husband and I eat Thai food at least once a week. I couldn't get enough!

So does Thai food transfer to cupcakes? Cupcake Project has a recipe for Intensely Thai Cupcakes. These cupcakes are made with coconut, lemongrass, and kaffir lime flavors in the cake and fish sauce caramel buttercream  frosting. Sounds intriguing & interesting.

What do you think? Thai cupcakes hit or miss?

Sticky Toffee Pudding Cupcakes from Cupcake Project

I learned something from reading Cupcake Project's post about Sticky Toffee Pudding cupcakes: sticky toffee pudding is made with DATES. I had no idea! I knew they had a unique flavor and I guess that's why.

Cupcake Project posted a recipe for Sticky Toffee Pudding cupcakes in honor of the start of Downton Abbey this month. You can find the recipe HERE.

Ginger "Softs" from Picky Palate

One of my favorite go-to recipe is Soft Perfect Gingersnaps from Picky Palate. My husband calls them Giner-softs because of how soft and delicious they are.

I baked them the other night to drop off to some friends for Christmas. Super easy to make and I didn't have to run to the store for any ingredients I didn't have.

Yum! I wish I had saved more for myself. You must try these out! You can find the recipe HERE.

White Chocolate Peppermint Mousse Cheesecake Cupcakes from Inside BruCrew Life

Cheesecake cupcakes. My weakness. I love both of them so much, so any recipe that combines them is a winner.

Inside BruCrew Life has a unique recipe for White Chocolate Peppermint Mousse Cheesecakes. I love trying out new flavors of desserts, and this one sounds like it's a home run & perfect for the holiday season. Check out the full recipe here.

Paleo Cupcakes from Runner's World

Someone recently told me they were thinking about becoming Paleo. But he said he didn't want to consider it if he couldn't have cupcakes. Luckily Runner's World recently published an article and recipe about paleo cupcakes.

These Sticky Toffee Figgy Cupcakes are made with pumpkin puree, figs, and coffee. Talk about a weird mixture!

I've heard Paleo can be a healthy diet, but if I couldn't eat bread I would never survive. I hope this recipe hopes some people survive the diet.

Pumpkin Snickerdoodle Cupcakes from Your Cup of Cake

It's the most wonderful time of the year!....pumpkin time! I love trying all different kinds of pumpkin recipes. This week's find is Pumpkin Snickerdoodle Cupcakes from Your Cup of Cake. These pumpkin cupcakes are topped with a cinnamon sugar cream cheese frosting. And the good news is these pumpkin cupcakes are made with a yellow or spice cake mix. Yay! The cupcakes are then dipped in butter before the frosting is added on top. Delicious! This one is definitely going to happen at my house.

What to do with Leftover Halloween Candy?

Halloween is over and if your house is like mine, there is still plenty of Halloween candy to make me sick for the rest of the year. So what to do with it?

Me and My Pink Mixer came up with an idea for "getting rid" of your Skittles. These Skittles Cupcakes are filled with Skittles and have crushed Skittles in the frosting. Genius!

As for the rest of your Halloween candy, I think I saw a recipe for a 7-layer chocolate candy dip....

Easy Chocolate Pumpkin Cupcakes from Picky Palate

I can't pass up a good pumpkin recipe. I'm a sucker for anything pumpkin and it's definitely that time of year!

Picky Palate recently published a recipe for 2-ingredient Chocolate Pumpkin Cupcakes. Two ingredients?! That's my kind of recipe! All you need is a can of pumpkin and a chocolate cake mix. That's it.

Well, you'll need a few other ingredients if you want to make homemade frosting. And trust me, you'll want to use the one from Picky Palate because it uses brown butter! Yes, I'm seriously making these this weekend.

"It's like your childhood in a cupcake!"

Who am I kidding? I still eat PB&Js all the time! I never tire of them. So when I saw this recipe from Chronicles of a Foodie, I shouted for joy! These Peanut Butter & Jelly cupcakes are made with a yellow cake mix, powdered freeze-dried strawberries, strawberry pie filling, and of course peanut butter. Yummy!

Grasshopper Cookies from Your Cup of Cake

I love myself a good grasshopper cookie. Mint and chocolate, mmmmmm.

You Cup of Cake posted a delicious-looking recipe for the Ultimate Grasshopper Cookies. What makes these extra special? Maybe the chocolate glaze or maybe the crumbled Andes mints on top? You decide.

This recipe could easily translate to cupcakes too. Just substitute with your favorite chocolate cupcake recipe.

Butterscotch Cupcakes from Sweetapolita

Can't ever go wrong with butterscotch!

Surprisingly, I don't think I've seen a butterscotch cupcake before. This Butterscotch Cupcake Supreme recipe from Sweetapolita is a brown sugar cupcake, brushed with a rum syrup, injected with homemade butterscotch sauce, topped with whipped marscapone frosting, and drizzled with more butterscotch sauce and toffee bits. Doesn't that sound delicious?!

You can find the recipe from Sweetapolita here.

Browning Butter...I Did It!

Yes I love eating desserts, but I have to admit that I'm not the best at baking them.

I can usually follow a recipe relatively well, but there are many occasions where I completely mess up.

But I keep trying. That's the important part. And when I got a hankering for something sweet last week, I gave my spatula-wielding another try.

This recipe from Picky Palate required browning butter. I don't know why I thought this would be hard, but this was my first time browning butter. But what do you know?....it was super easy and totally worth it in the end.

The recipe I chose to make was Brown Butter Salted Chocolate Chip Cookie For One. I've made millions of chocolate chip cookies, but this one was different. Why? It's all about the brown butter.

The recipe makes only one cookie, but it's a big one. And I ate it all myself! I couldn't even wait to take a photo before taking a bite (see the crack down the middle?).

Root Beer Cupcakes from Java Cupcake

Was does root beer remind me so much of summer? Maybe it's because I love drinking it at BBQs. And BBQs remind me of summer. Sitting around talking with friends until the sun goes down. Yes, that's summer and I'm so happy today is the first official day of summer!

Here's a recipe from Java Cupcake for Root Beer Cupcakes. These cupcakes are made with root beer syrup (recipe also included on Java Cupcake), and bourbon vanilla cream buttercream. YUM!
