I love mini cupcakes. They are the perfect size to not make me feel too guilty for eating a few. Two Peas & Their Pod recently posted a recipe for Mini Chocolate Chip Maple Pancake cupcakes inspired by a cupcake from Baked by Melissa in NYC.
