Bubba Sweets Opens Second Location Today

Bubba Sweets, local cupcake ship & winner of Cupcake Wars, is expanding! Their second location is opening today and will also be in Huntington Beach.

Bubba Sweets has been a Huntington Beach resident for a few years. Two years ago my friends surprised me with a baby shower at Bubba Sweets. Last year they appeared on Cupcake Wars and won. So why haven't I done an official review yet?! Yikes!....I don't know. Guess I need to get my act together since they seem to be successful enough to expand.

Their second cupcake shop is located at 21168 Beach Blvd, Huntington Beach, CA. They will be open from 11-8 today. Let me know if you stop by. I'd love to hear the details!

Pop Tart Ice Cream Sandwich from Carl's Jr.

I had been waiting to post about this hoping that I would get the chance to try one first. But since I'm not a huge Carl's Jr. fan I haven't stopped by a store yet.

Yes, at first glance these Pop Tart Ice Cream Sandwiches sound delicious, but then I started thinking about pop tarts. I would never eat a pop tart that wasn't toasted. So would I eat an untoasted one as part of an ice cream sandwich? No way! I highly doubt Carl's Jr. toasts them, so I feel no need to try them.

What do you think? Have you tried one yet?

Panera Bread Debuts Cupcakes

Last night I got an email from Panera Bread introducing CUPCAKES! There are three flavors available -- red velvet, chocolate, and vanilla. Of course I'm excited but it's hard to expect much from a restaurant that specializes in delicious soup, salads, and sandwiches. Are you excited?

"It's like your childhood in a cupcake!"

Who am I kidding? I still eat PB&Js all the time! I never tire of them. So when I saw this recipe from Chronicles of a Foodie, I shouted for joy! These Peanut Butter & Jelly cupcakes are made with a yellow cake mix, powdered freeze-dried strawberries, strawberry pie filling, and of course peanut butter. Yummy!

I Earned These Calories

Last month we family and I spent a glorious week in Kauai. Lots of sunbathing, swimming, and eating happened.

But the best part of the trip was the 22-mile trail run my husband and I did. Yes, I said 22 miles. You see, you can only reach the most beautiful beach in the world by boat or hiking the Kalalau Trail. Since my husband and I are both in the middle of marathon training, this was the perfect time to do this run.

It was the hardest run I've ever done and the longest by far. It took about 7-1/2 hours. Well, that's probably because it also had 10,000 feet of climbing. Yup, we are crazy!

But the views?.....oh the views were gorgeous! It got more and more beautiful as the trail went further. Hidden waterfalls, the smell of fresh fruit, the bright blue ocean below....heaven.

Gotta replace those calories quickly, right? Well, Hawaii is known for their malasadas. Pretty much they are friend donut holes covered in sugar, but way better. Some were filled with cream too. So delicious and so worth burning all of those calories!

Special Delivery of Fairy Cakes Cupcakes

I love running and I love cupcakes. And apparently I'm not the only one.

Two weekends ago was the Disneyland 1/2 Marathon. During the weekend, all of my fellow cupcake runner friends got together for a little meet-up before the race. I couldn't make it because I was working at my booth at the expo (Sparkle Athletic), but one of the attendees was kind enough to bring me a box of mini cupcakes.

The cupcakes were from Fairy Cakes Bakery in Orange County. I've tasted Fairy Cakes before (at the LA Cupcake Challenge in 2010), and LOVED them! The Pumpkin White Chocolate was absolutely delicious!

But since they don't have a store front, I haven't had the chance to try them again...until now.

Thank you to Krissy for bringing these pieces of heaven to me. The minis were Pineapple Upside-Down cake cupcakes. They were moist, delicious, and so tasty.

Right now Fairy Cakes Bakery is just a made-to-order cupcake company. Maybe one day they will expand and get their own shop. Until then, I'll keep dreaming about those pumpkin cupcakes.....

Have You Seen Muffintops?

I think the last thing I want to be reminded of while eating a cupcake (or muffin) is that it's contributing to a possible muffin top. But it's a unique idea anyway. Check out these muffin (or cupcake) top baking cups from Fred.

"Fill these adorable jean-style cupcake pants with your favorite cupcake batter. As Muffin Tops bake, they develop that little extra bulge around the middle! Eat up, it's just more to love."

Cupcake Cookie from Sugar Me Bakery

I've reviewed Sugar Me Bakery before, but had been meaning to go back to taste their sugar cookies. I'm a sucker for sugar cookies when I get in certain moods.

And this sugar cookie was calling my way. I mean, look at it!....it's got a cupcake on it. Yes, I was so excited to eat this, but it wasn't quite what I was hoping for. It wasn't as soft as I expected. But I solved this by dripping it in milk. Much better.

The cookie was decent, but not worth $4.25. I think I'll stick to the cupcakes. You can read my review HERE.
